If you have a lot of leftover veggies, here's a quick and delicious way to prepare them. It's beautiful, colourful and so good for you!

For the dressing: Place all the dressing ingredients in a glass jar. Whisk till combined. *This can be made in advance.
To make the salad: Cut the large vegetables into 1/2. Feed cabbage, beet, carrot, zucchini & apple through a grater attachment into a food processor.
Pour everything out of the food processor into a large bowl and gently toss together with capers and mint.
Slice the avocados into thin slices.
Place the avocado onto two serving plates, Add the shredded vegetables, then drizzle with some dressing. Season with a little flaky sea salt & pepper.
