Step 1

Bring milk to a simmer over med heat. Once simmering, remove from heat, stir in shortening until melted, then set aside till cooled to about 110F

Place remaining ingredients in a mixing bowl fit with dough hook. *optional* 1-2 tbs chopped herbs. I chose to add chopped thyme to my dough mixture

Pour in milk mixture and mix on lowest speed until dough starts to form a ball, about 1-2 mins. Increase to med-low, mix until smooth, about 4-5 mins

Place in lightly oiled bowl, turning dough to coat. Cover with towel, place in warm spot about 1 hour, or till doubled in size

Punch down dough, divide dough into 48 pieces for mini sliders, or 32 for regular sliders. Shape bun, slightly flattened, place on un-greased sheet

Set buns in warm place about 40 minutes, until slightly puffed, not doubled. Optionally, before baking, brush tops with egg and add desired toppings

Place on middle rack, in oven preheated to 350, for 15-20 minutes, depending on size of buns, till golden and crusty, transfer to cooling rack
