This is my current go-to starter/appetizer. The ricotta & tofu goes really well together, and the ginger soy sauce cuts through the flavour perfectly!

Japanese Cold Tofu With Ricotta Cheese

Instructions

Step 1

Prepare the ingredients beforehand: thinly shred the basil and mint, measure out the other ingredients

Prepare the ginger soy sauce by heating a small pan and adding the shoyu, mirin and sugar, stirring until the sugar is dissolved

Let the sauce cool, then stir in the grated ginger
