Step 1

Spray a tiny cupcake or muffin tin with cooking spray or in my case I used some unsalted butter. Heat oven to 350.

Combine a cup of oats and raspberries (or blueberries) with 2 cups with egg whites, stir in 1 teaspoon of sugar.

Pour mixture into mini muffin tin. Should make about 12 mini muffins. Put this into the oven at 350F for about 15 minutes.

Take the tin out of the oven at 15 minutes. It might look a bit raw still but let it sit out to cool and solidify for another 15 min.
